Law school is a marathon, not a sprint. Between study sessions, and back-to-back classes, finding time to eat can be challenging. Yet, fueling your body with the right nutrients is crucial for maintaining focus and energy.
Recipes to Beat the Heat!
With the temperaturessoaring this summer, here are some easy recipes to Beat the Heat!

Watermelon Feta Salad:
This salad is packed with flavor and is great for hydrating you on a hot summer’s day. The juicy watermelon will cool you down and the feta and mint will pack this salad with tons of flavor!
Ingredients:
- ½ a watermelon, diced into small cubes
- ⅓ cup feta cheese, crumbled
- ¼ cup mint leaves, shredded
Optional:
- ¼ cup red onion, diced
- ¼ cup jalapeno pepper, diced
Dressing:
- 3 tbsp olive oil
- 1 tbsp lemon juice
- Salt to taste

Peach Balsamic Pizza:
Okay fine, maybe this isn’t pizza per se, but summer brings beautiful peaches and this flatbread will fill all of your comfort food desires while letting you have a taste of summer.
Ingredients:
- 1 batch store-bought pizza base/flatbread
- 4 peaches
- 1 cup goat cheese
- 4 tbsp balsamic glaze OR ½ cup balsamic vinaigrette
- ¼ cup basil leaves, chopped
Directions for Balsamic Reduction: If you don’t have balsamic glaze but you do have balsamic vinaigrette, you can make a reduction by yourself in a saucepan! Just heat the vinaigrette in a saucepan until it boils, then reduce to low heat and let it simmer until it reduces into a glaze. Set aside and let it cool until you’re ready to use it.
Directions:
- Pit peaches and cut into slices. Grill them on a grill pan until charred on one side.
- Prepare pizza. Place goat cheese over the base/flatbread, then lay out peaches. Drizzle balsamic glaze over peaches and cheese but leave a small amount of glaze for finishing.
- Bake pizza for 8-10 minutes, then remove and let cool for 2 minutes.
- Garnish with basil leaves and drizzle remaining glaze.
- Enjoy!

Tuna Crunch Bites:
Hot weather calls for light, refreshing snacks and these tuna bites are just that! They’re low-carb, high-protein, and take minutes to make.
Main Ingredients:
- 1 can tuna,
- drained 2 tbsp mayonnaise or Greek yogurt
- 1 tsp lemon juice
- Salt and pepper to taste
Add-ins (Mix & Match):
- 1 tbsp finely chopped red onion
- 1 tbsp chopped fresh parsley or dill
- 1 tbsp diced pickles or jalapeños for a kick
Optional: 1 tbsp chopped toasted almonds or sunflower seeds for crunch
To Serve: Scoop the tuna mixture onto cucumber rounds or celery sticks for a refreshing, crunchy bite. Perfect for those back-to-back Zoom lectures or a quick protein fix between readings.

Lemon Crumb Bars:
There’s no summer without lemons! Not only do these lemon bars melt in your mouth making them the ideal treat for summer, but they are also super simple to make.
Ingredients for crust:
- 1½ cups flour
- ⅔ cup sugar
- ¼ tsp salt
- ¾ cup cold butter, cubed
- 1 tsp vanilla extract
Ingredients for Lemon Filling:
- 2 eggs
- ¾ cup sugar
- 2 tbsp lemon zest
- ⅓ cup lemon juice
- Pinch of salt
Directions:
- Preheat oven to 350 F
- Combine crust ingredients until crumbly, then firmly press into the bottom of a baking dish. Bake for 15 minutes.
- Whisk lemon filling ingredients until smooth. Pour over the baked crust.
- Bake for an additional 20 minutes until set. Let cool completely.
- Sprinkle powdered sugar on top (optional) and enjoy!
